• 1 medium cauliflower head (~ 5 cups)
  • 1 Tbsp olive oil
  • Spices:
    • ½ Tsp black pepper
    • ½ Tsp oregano
    • 1 Tsp sesame sedes
    • 8 mint leaves (chopped)



  1. Chop the cauliflower head in florets. They should be small enough to fit into the food processor (process little bunches several times as you want the cauliflower to be thoroughly grinded)

  1. Boil the cauliflower for 12 minutes over medium heat
  2. Take it out of the boiling water and drain all the liquid

3. Place it into a large bowl with the rest of ingredients and mix everything

finished product


This is the perfect replacement for regular rice, couscous or even quinoa. Not that they are bad for you, but this is a perfect dish to sneak in more veggies!
